Cucumber Lime Shrimp Recipe

27 Jul

Attention seafood lovers, this recipe is for you!

I made cucumber lime shrimp the other day, and it came out so delicious I had to share the recipe with you guys. So first things first, you’re going to need your favorite spices, a cup of shrimp, some diced cucumbers, parsley or cilantro leaves, and freshly squeezed juice from half of a lime.

Once you’ve diced your leaves and cucumber, mixed it with the spices and the thawed, peeled shrimp, I would then set a pan to medium and add coconut oil or olive oil to bring to a simmer.

Then you throw everything in together, and only after the shrimp has gotten a bit pink, add in your lime juice to the pan!

I would leave everything in the pan until the shrimp are completely pink, around 10 – 15 minutes. Once it’s all finished, pair it with your favorite side. I chose an arugula lettuce salad with a parmesan vinaigrette.

If you try this recipe, let me know how it comes out! Bon appetite!
